With the beginning of February this week I decided its time to start being a little more conscious with what we eat in our home. Everybody starts January with “New year, New Me” well, I like to be different and I start in February. Kidding, it just takes me a while to come to terms with breaking up with my snack food… I saw this recipe keep popping up and thought they looked like an easy snack and a way to use the aging bananas on my counter before they are just tossed.
Ingredients
2 1/2 ripe bananas
2 cups of oats
1/2 cup dark chocolate chips
Teaspoon of vanilla extract (OK this makes it 4 ingredients)
Instructions
Preheat the oven to 350 degrees
Using a fork, mash bananas in a large bowl
Mix in oats and chocolate chips
Add a teaspoon of vanilla extract
Spread dough on wax paper about 1/2 inch thick
Cut out cookies and place on baking sheet. (The cookies will not spread in the oven so they will stay the shape you make them.) You can also use a dough scooper or roll them into balls.
Bake for 12-15 minutes
Sprinkle with powdered sugar and enjoy!
